Cajamarca is a small, fertile mountain town located in the Tolima department of Colombia. Founded by Paisa pioneers in the 19th century, the town has managed to overcome its violent past and become a flourishing agricultural center. Although its subsoil is rich in precious minerals, the municipality has chosen to concentrate on agriculture instead of mining, in order to protect and preserve its unique natural environment. Historically, the region hasn't focused on coffee cultivation — but its microclimate and geographical conditions are a perfect fit for the crop, and the town is beginning to envision a bright future in it. This is a new project for us, and we couldn't be happier to share it with you. |
