Frequently Asked Questions
About Pergamino
Pergamino is a Colombian specialty coffee company owned by Café de Santa Bárbara S.A.S. that works in every stage of the coffee chain, from farm to cup. The family began growing coffee more than 30 years ago in Santa Bárbara, Antioquia, and now works with more than 1,500 allied producers across Colombia. Most of its coffee is exported green to roasters worldwide, but some of the best lots stay in Colombia: Pergamino roasts them daily in small batches in Medellín and ships them fresh to customers in the United States and Canada.
Our coffee
Where is your coffee from?
All our coffee is from Colombia: our own farm in Santa Bárbara, Antioquia, and allied producers in regions such as Tolima, Nariño and Huila. Each product lists its region, variety, process and altitude.
Is your coffee Fair Trade certified?
No. Our coffee is not Fair Trade certified. Instead, we work directly with our allied producers across Colombia and reward their commitment to quality with a higher price and a long-term relationship. Every coffee is traceable to its region, and often to the producer who grew it.
Where and how is it roasted?
We roast in small batches in Medellín, Colombia, close to the farms. Roasting happens daily: each website order goes into the next business day's roast plan, so your coffee usually arrives 1 to 2 weeks after roasting.
Which coffee should I choose?
- New to specialty coffee: Lomaverde, a classic Colombian cup with chocolate, caramel and yellow fruit, soft with medium acidity.
- Balanced and fruity: Alto de Letras, with strawberry, chocolate and honey.
- Fruity and sweet: Buesaco, with black plum, peach syrup and panela.
- Strong and bold: Alonso, our only medium-dark roast, with notes of dark chocolate.
- Floral and delicate: the Borbón Rosado special edition, with lemongrass, panela and orange blossom.
- No caffeine: Decaf Lomaverde.
- To compare three regions: the Three-Origin Kit.
Do you have decaf?
Yes. Decaf Lomaverde comes from our own farm and is decaffeinated with ethyl acetate, a natural compound found in sugarcane and bananas. It leaves the coffee 99.9% caffeine-free with a softer cup.
Do you sell whole bean or ground?
Every 500 g bag is available whole bean or ground fine, medium or coarse. The Advent Calendar is whole bean only.
Which grind should I choose?
Fine for espresso and moka pot, medium for drip and pour-over, coarse for French press and cold brew. Whole bean keeps freshest if you have a grinder.
Which brew method do you recommend?
All our coffees work with any method, including espresso. We recommend filter brewing, such as pour-over or drip, because it shows each coffee's nuances best.
How should I store my coffee?
Keep it in its sealed bag, away from light, heat and moisture. Do not refrigerate. For the best flavor, enjoy whole bean within 5 months of roasting and ground coffee within 2 months.
What makes a good gift?
The Advent Calendar (24 coffees, a pour-over brewer and a tasting journal) and the Three-Origin Kit (three 500 g bags from three regions, at 10% off).
