As in wine, the variety of the coffee tree greatly affects the profile and quality of the final cup. In the mid-20th century, Colombia gained its reputation as one of the best coffee producers in the world thanks to a single variety o tree: Typica, often called Pajarito. Originating in Ethiopia over 300 years ago, the Typica tree has evolved and taken on new characteristics, but continues to produce an incredible cup of coffee, when grown at altitudes over 1800 meters. Despite its initial popularity in Colombia's emerging coffee economy, Typica is now difficult to find in the country, due to its height and low productivity. We were thrilled to discover small farms in the town of San Antonio, in Cauca, cultivating an elegant Pajarito with notes of panela, cranberry and floral honey.
