The Moka variety originally comes from Yemen, the heart of coffee production and commercialization in the 17th and 18th centuries. The variety’s small bean size was a natural mutation, stemming from the region’s dry climate, and its name comes from the al-Makha port, the hub of coffee exportation to the entire Ottoman Empire, and later to Europe.
This special edition also stands out for its “honey” farm processing, depulped, dried with its mucilage for 20 days under the sun.
