The origin of the name Agualinda, or "Beautiful Water", becomes obvious the first time you visit this beautiful farm. Four small creeks are born on the top of the estate and come down slowly and calmly protected by thick native forests which are kept untouched and comprises a third of the farm's total extension. A couple of years ago we planted in Agualinda a parcel of the coffee variety Chiroso, with which we have fallen in love since discovering it in Urrao almost a decade ago. This variety produces beans that are thin and long, as elegant as the floral cup profile they produce. It's process is "natural" which consists in drying the beans without taking off its cherry. The result is a longer and warmer fermentations, which in turn leads to the production of more acetic acids and a complex profile, which we describe as a mix between mango and brandy.
